Foster’s Pot Roast with Red Wine

I haven’t had a good Sunday-afternoon type meal in a long time. I had a few girls over from Providence last night and we enjoyed you typical Sunday after church meal. We had pot roast, goat cheese, rosemary, and cream mashed potatoes, balsamic roasted green beans and mushrooms, corn muffins, and apple cobbler with ice cream. Even cheese and crackers for an appetizer. It was fun. We had a good night. Here is the recipe fo the pot roast:

2.5 lb chuck roast (or slightly larger)
olive oil (to sear the meat in)
1 large onion, cut into wedges
1 bag baby carrots
6 fresh thyme leaves
6 fresh rosemary twigs
1 cup red wine
4 cups beef broth
2 cups water
s/p

Generously s/p your meat. Sear meat on both sides(with olive oil, about 3 minutes per side, medium high heat, dutch oven). Take meat out and let it rest. Meanwhile, cook onions for about 3 minutes. Return meat the the pan, add in the rest of the liquids and herbs, and carrots. Bring to a boil. Put in oven, covered, 325, for about 2 1/2 hours or until the meat falls apart with a fork.

    “Sear it on both sides of pan” um… wouldn’t that make quite a mess? How about I just sear both sides of the roast. 😉

    I love simple recipes. The only thing I would do different when making the pot roast is I always cook with grass fed beef. I work with La Cense Beef, and grass fed beef is extremely healthy for you. It is lower in calories and fat and higher in omega 3 acids and beta carotene. Not to mention the flavor difference is amazing.

      Thank you. I know the difference in taste, but it is expensive, so when feeding a larger group – I don’t have money to spend on expensive meet. But, believe me, everything is better about it.
