Curried Chickpea Stew

I don’t know what you wanna call this, but I’ll just call it good and healthy

1 can chickpeas, rinsed
1 can green beans, rinsed
1 can diced tomatoes, undrained
2 shallots
3/4 inch of fresh ginger, peeled and chopped
2 heaping teaspoons curry powder
evoo
splashes of low-sodium soy sauce
1 tsp ground pepper

Saute shallots and ginger in evoo. Dump in the rest, simmer for 10 minutes. Yum and spicy (add more curry – like I would when I make this next time)
